1 lb alligator tail meat—cut into chunks

1 c flour

1 c buttermilk

1 c vegetable oil

1 T of Lowry’s season salt

Salt and Pepper to taste

3 large Russet potatoes

Optional Toppings-butter, grated cheese, sour cream, bacon and chives

Optional sauces-honey mustard, your favorite BBQ sauce

*Preheat oven to 350°

*Take your alligator meat and cut it into small chunks

* Place meat in buttermilk mixture and let it sit for a couple hours. (If you can let it sit overnight)

*Cook three large potatoes in oven at 350° for an hour

*Put oil in a large skillet and heat the oil to 350°

* In a bowl combine flour, salt, pepper, season salt

* Take the meat out of the buttermilk and drop them in flour mixture and dredge them.

* Place the coated meat in the pan until golden brown

*Cut the potatoes open and put your favorite toppings on them. Place the fried gator on the potatoes. Optional-add your favorite BBQ sauce or honey mustard on top.
