Ingredients:

2-3 LBS Venison STEAK

Pit Boss Grill Seasoning RUB

2 CUPS SPINACH

4 SLICES HAVARTI CHEESE

4 SLICES PROVOLONE CHEESE

1 CUP SUN-DRIED TOMATOES

TOOTHPICKS, FOR HOLDING MEAT TOGETHER

Instructions:

When ready to cook, set the Pit Boss Grill to 375℉ and preheat, lid closed for 15 minutes.

Tenderize your venison up and down each side.

Season venison generously with Pit Boss seasoning rub. Butterfly cut your venison steak and add your layer of spinach. Depending the size of the steak you can add the full 2 cups. Then add a layer of cheese and lastly the sun-dried tomatoes.

Tightly roll the meat up and insert toothpicks to hold it together.

Place meat roll directly on the grill grates and cook for 20-35 minutes, until your preference for doneness. After reaching your desired temperature, remove from grill and let rest for 10 minutes before slicing.

You can also choose to wrap this venison pinwheel in bacon.
