INGREDIENTS

6 slices of bacon (do not recommend thick cut bacon)

1 elk tenderloin, cut in half

2-4 tbsp. olive oil

2 tsp. Pit Boss GSP seasoning (garlic, salt, pepper)

2 tsp. Pit Boss Chop House seasoning

1-2 tsp. onion salt

4 tbsp. butter

1 (8 oz) package of sliced mushrooms

2 cloves minced garlic

2-3 tbsp. chopped green onion, or more to taste

½ cup heavy whipping cream, or more to taste

INSTRUCTIONS

  1. Preheat Pit Boss grill to 350 degrees.
  2. Tenderize tenderloin and lightly cover with olive oil. Season oiled tenderloin halves with Pit Boss GSP and Chop House seasonings.
  3. Wrap tenderloin halves completely with bacon. For easier cleanup, place bacon-wrapped tenderloins into disposable baking dish and put onto the pre-heated grill until the bacon is cooked or desired wellness.
  4. While tenderloin is grilling, heat butter with garlic and onion salt in a saucepan. Add mushrooms and sauté for about 8-10 mins, stirring frequently.
  5. Once mushrooms are cooked, Stir in green onions and heavy cream until heated throughout.
  6. Remove bacon-wrapped tenderloin from grill and slice into medallions.
  7. Serve with creamy garlic sauce on the side, and enjoy!
