Mexican Cornbread- (Found in Marsha’s Cookbook Down Home Recipes on Page 54)
1 lb of burger
1 can of cream-style corn
1 package cornbread mix
1/4 cup chopped onion
1 tsp of chili powder
2/3 cup of milk
1 tsp of salt
1 cup of blended cheese
*Preheat the oven at 375°
*Brown the burger, salt and onion, then drain.
*In a bowl mix eggs, half the can of creamed corn, milk, chili powder, and cornbread mix.
*Slightly grease your 9X13 pan
*Pour half of the cornbread mix into pan.
* Add a layer of the meat and onion mixture.
*Follow by adding the remaining cheese and creamed-corn
* Pour the remaining batter on top and a little cheese
* Bake for 45 min or until the center is cooked
